They should identify the same order, so yes, in my feedback the default
view would display a pointing-down arrow on the Date Created column.

Even more so. If you make them appear only on hover, someone might miss
that there is another custom sorting applied once they get rid of the
first one on a given column. I mean, multiple column sorting would be
both poorly discoverable and revertible as a feature.

But IMO I would avoid multiple columns sorting entirely. I think every
use case when someone would want to use multiple sortings would be best
served by appropriate filters, so I would focus on improving filtering.
The more granular, the better.
